Meditate on my second and, wordless, gaze
At the rising sun -- and the art of catchphrase.
People admire those with a ton of my third
But all need just one -- a hoofed animal heard. 
Now my whole is a gateway into the fold,
Chef of four courses, of Princeton times old.
 

Solution and Explanation
First:  EYE (AYE)
If one has a keen eye for something, one can find the best.  The noise, or sound of, agreement is "aye", as when casting an oral vote.  When a person is at rest, his eyes may be closed, or shielded.

Second: ZEN

Zen Buddhism is known for meditation and the wordless communication of ideas.  As the rising sun is found in the east, the clue points toward what those in the United States view as the eastern part of the world, where Zen originated.  Lastly, "Zen and the Art of . . . " has become a catchphrase to describe the communion between an individual and an ordinary act.

Third:  HEART (HART)

People with a ton of heart are often much admired, but people need just one organic heart to live.  Also, a hart is a male red tailed deer, a hoofed animal.

EYE + ZEN + HEART = EISENHARDT

Eisenhardt was a professor of mathematics who eventually became Dean of the Graduate School.  The arch named after him is the gateway leading to the Graduate College.  Eisenhardt is credited for having introduced and implemented Princeton's four course plan.
