Freshman Zee Dinners - The "Flavor Lab"
This Fall Mathey is partnering with the new Princeton Center for Food Studies and the Americana Diner in East Windsor, NJ in a pilot project called Flavor Lab - A Sense of Place on the Plate.
Each residential group of freshmen in the class of 2017 is invited with their RCA, RGS, and peer advisor(s) to attend their own individual Zee dinner at 23 University Place, the house of the Master of Mathey College. The dinner will consist of locally sourced, seasonally fresh ingredients, prepared by Chef Craig Shelton. The aim of the dinner series is to enjoy delicious and healthy local food, prepared in an imaginative and sustainable way (and plenty of vegetarian and vegan options are available).
As a final gesture to sustainable agriculture, all food waste will be composted through Princeton's Curbside Food Waste Program and no paper products will be used!
