Spotlight Name: Rick Olmstead Position: Cook in dining services. Preparing breakfast, lunch and sometimes dinner in the Rockefeller/Mathey dining facility. Other interests: Rollerblading, playing horseshoes and spending time with his 110-pound chocolate lab, Cocoa.     People Angelique Grant has been named director of development for the Princeton-Blairstown Center. She comes to the position from Washington State University, where she served as an instructor in the Murrow School of Communication and is completing a doctoral degree in higher education administration. She also has been the assistant diretor of development and alumni relations, an alumni and development coordinator and a development coordinator for special projects for the WSU Foundation.
